I decided to add the famous Everything But The Bagel Sesame Seasoning to take these crackers to the next level. And I have to say, these are a winner! Now dont be intimidated by making crackers from scratch  - these are super simple to make. The base of this bagel recipe is just four ingredients. Flour, water, salt and oil – all mixed in a bowl. Fennel and Lentil Soup with Gremolata I love fennel, always, but especially during this time of year, when cravings for spring start coming on strong. Fennel’s one-of-a-kind anise flavor, brightness, and crunch really hit the spot, while I dream of verdant spring produce. It’s also citrus season, and simple mandolined fennel and blood orange salads are a favorite (something like this salad, plus segmented or sliced orange, and often without the beans). Fennel is delicious cooked, too – caramelized sauteed fennel, fennel gratin, etc. We also love it in soups, and this week’s recipe is a super simple lentil soup, centered around fennel. We use fennel seeds and bulbs in the soup, and even include the greens from the fennel tops in gremolata, for topping the soup. When it comes to very simple dishes like this one, it’s all about the accompaniments, which is where the gremolata comes in. It’s a condiment kind of similar to Italian salsa verde but without oil, made with just chopped parsley, garlic, and lemon zest. It’s delicious spooned over pretty much any savory fare. That, plus maybe some good, crusty bread, and you’re in for a very cozy meal with this soup. Hope you’ll give it a try! P.S. We just revived our Youtube Channel! Fennel and Lentil Soup with Gremolata   Print Serves: 4-6 Ingredients 1 tablespoon fennel seeds 1 large or 2 medium fennel bulbs olive oil sea salt 1 yellow onion, diced small 1 medium carrot, diced small 1 celery stalk, diced small 6 garlic cloves, minced, divided freshly ground black pepper 1 cup brown or French lentils, rinsed 2 bay leaves zest and juice from 1 lemon leaves from 1 small bunch parsley, finely chopped Instructions Toast the fennel seeds in a dry skillet on medium high heat until fragrant, 30 seconds to 1 minute. Watch closely so as not to burn. Let cool slightly and grind the seeds in a mortar and pestle, spice grinder, or a dedicated coffee grinder. Cut the stalks off the fennel, pick off the tender fronds and set them aside for later. Discard the stalks or save to use for vegetable broth or even for juicing. Cut the fennel into wedges. Heat a soup pot over medium heat and add enough oil to generously coat the bottom. Add the fennel wedges and sprinkle them with salt. Let the fennel caramelize and brown for 3-4 minutes, until the undersides are golden, then flip and repeat on the other side. Transfer the fennel to a plate or bowl for now. Add the onion, carrot, and celery to the pot, along with a pinch of salt. Saute over medium low heat, until the vegetables are soft but not browned, about 10-15 minutes. Add about 5 garlic cloves worth of minced garlic (saving 1 minced clove for the gremolata), ground fennel seeds, and black pepper to taste, stir around until fragrant, about 30 seconds. Add the fennel wedges, lentils, bay leaves, 6 cups of water, and more salt to taste. Bring to a simmer and simmer, covered, until the lentils and fennel are tender. Brown lentils usually cook in 15-20 minutes, while French lentils take a bit longer, 20-25 minutes. No matter which lentils youre using, start tasting them at 15 minutes to keep them from getting mushy. Once the soup is done, turn off the heat and add the lemon juice. Discard the bay leaves. Taste for salt and pepper, and adjust if needed. While the soup is cooking, make the gremolata. Finely chop the tender fronds reserved from the fennel. In a small bowl, combine the fennel fronds, lemon zest, parsley, and the remaining minced garlic (1 clove). Mix to combine. Big Hugs Chickn & Rice Soup Serves 4-6 Call me an iconoclast but, but I prefer Chickn & Rice Soup to Chickn Noodle! Especially buttery jasmine rice. This soup has all the huggy ingredients: celery, dill, poultry seasoning with sage and thyme and, of course, garlic and onion. As it cooks your kitchen will fill up with the most nurturing aromas, like someone you love is cooking for you. And that someone, dear reader, is you. I used homemade Chickn Seitan, but you can use whatever vegan chicken you like. Or even thinly slice tofu or yuba. Just make sure to brown it nicely first. I also use some vegan butter here, for body and richness, but use all olive oil if you prefer. Its gonna be good! Recipe notes: ~ If the pot youre cooking in is wide enough, like a dutch oven, you should be able to brown the chickn in there before preparing the rest of the soup. Save yourself a dish, plus create little crispy bits that get swept up into the soup when you saute everything else. If youre using a stainless steel pot that is more tall than wide, its probably wiser to saute the chickn in a skillet and prepare the soup separately. Ingredients 1 tablespoon olive oil 2 cups chickn seitan, pulled into 1 to 2 inch pieces (8 oz) 2 tablespoons vegan butter (I used Miyokos) 1 medium yellow onion, thinly sliced 2 cups carrots, in 1/­­2 inch chunks 2 ribs celery, thinly sliced 3 cloves garlic, minced 1 teaspoon poultry seasoning 1 teaspoon salt Fresh black pepper 1/­­2 cup white jasmine rice, rinsed 8 cups broth 1/­­4 cup fresh dill, chopped, plus extra for garnish Directions Preheat a 4 quart pot over medium heat. Saute chickn in olive oil with a pinch of salt until nicely browned. Remove from pot and set aside.  Saute onion in butter with a pinch of salt for about 5 minutes, until translucent. Add carrots and celery and cook for about 5 minutes. Add garlic and saute until fragrant, about a minute, using a little extra butter if you like. Add poultry seasoning, salt and pepper and saute a minute more. Add rice and broth. Cover and bring to a boil. Once boiling, bring down to a simmer, and let cook for about 15 more minutes, until rice is cooked and carrot is tender. Stir in the chickn and dill and taste for salt and pepper. This definitely tastes better the longer you let it sit, but it can be enjoyed right away, too. Garnish with extra dill and serve!

Aloo (potatoes) and Palak (spinach) are two vegetables I always have in my kitchen. Potatoes we all know are used in so many ways and have endless recipes. I also use spinach in many dishes. I thought I had done this recipe a long time ago, but today I made this dish for my family after some time and they enjoyed it very much and asked me if I have done this video recipe. I was looking on my website and realized I have not done this recipe yet. This is a common recipe, but this is my version of Aloo Palak. Adding fenugreek seeds and besan (gram flour) kicks off the flavor to the dish. For me and Alex, this is a comfort dish. This recipe is also vegan and gluten free. I serve this as a side dish, or I enjoy rolling it in a Roti or Paratha to make a to-go lunch. Alex especially enjoys making grilled cheese sandwiches filled with leftover Aloo Palak. I have done many recipes for spinach: Palak Paneer, Saag, Spinach Crisps, Chole Palak, Palak Puri This recipe will serve 4. Course Main Course Cuisine Indian Prep Time 10 minutes Cook Time 20 minutes Total Time 30 minutes Servings 4 people Ingredients2 cup potatoes cut into small pieces I used 2 medium size potatoes 4 cup spinach finely chopped, approx. 8oz 1/­­2 cup tomato finely chopped 4 Tbsp oil 1 tsp cumin seed jeera 1/­­4 tsp fenugreek seeds methi optional 1 Tbsp besan gram flour 1 Tbsp coriander powder dhania 1/­­2 tsp red chili powder adjust to taste 1/­­4 tsp turmeric haldi 1 tsp salt 1/­­2 tsp mango powder amchoor InstructionsHeat the oil in a saucepan. The oil should be moderately hot. Add the cumin seeds as they crack add besan, and fenugreek seeds. Stir for about one minute, besan will become aromatic and will be light golden brown. Next add tomato, coriander, red chili powder, and turmeric. Stir-fry spice mix until spice mix starts leaving the oil. It should take about 2 minutes. Add potatoes, spinach, and 1/­­2 cup of water, cover the pan. Let it cook over medium heat. The potatoes should be very tender but not mushy and should be covered with spinach. NotesDo stir in between besan can stick to the bottom of the pan. I did stir once in between. If needed, add a little more water. Aloo Palak should not be very dry, it should be moist. Springtime & Holi! I am very excited about the weather becoming warmer and Spring’s arrival.  With this also comes Holi, one of my favorite festivals! Holi is the festival of colors and will be celebrated on March 28th. I am beginning my preparations as we speak! The house will soon be full of sweet aromas to indicate Holi is coming. Of course, this also allows me to spend more time in my favorite place at my home - the kitchen! I love the spirit of the holidays! The holidays bring back a lot of fun memories from my childhood. As a young child, I can vividly remember the whole neighborhood filled with excitement as the delicious aromas of Holi wafted throughout the neighborhood. Of course, we loved to “play” Holi, throwing brightly colored powders at each other to celebrate! I can remember my mother also being very excited about Holi.  She loved to prepare a variety of finger foods because it was easy to share with friends and neighbors. I am planning to make sweet and savory snacks that can last until it is Holi. This year, celebrating Holi will be different because we still need to socially distance ourselves, even though most of our friends are fully vaccinated.  Despite this, I am still excited to spend time with friends and family! Here are a few of the dishes I plan on preparing to celebrate Holi:  Gujia, Besan Ka Ladoo, Meethi matries, Crispy Shakarpara (Almond Biscuit), Besan Sev, Apple Coconut Barfi.  For a cold refreshing beverage, I plan on making Thandai (a special drink traditionally made for Holi). Inspiration for Vegetarian Recipes As you all know, Indian cuisine will always be my favorite cuisine. It will always have a special place in my heart. However, we are living in different times. Our lifestyle has changed with the emerging culture. The same thing is happening with food. I like that the norms are changing. My family, especially my grandkids, are not happy just with traditional Indian food; they need variety, just like me. I experiment with the different food from different cultures, staying true to my guidelines. Thus, the challenge comes. I have never tried some of these dishes. Finding vegetarian dishes in any given cuisine is not that big of a problem; the problem is finding recipes without onion and garlic. I go on google and YouTube, searching for recipes and creating a dish that makes sense to me. First, I try different sauces. I think that makes it easy to create the dishes for that cuisine. My family gets to try my creations and give me their honest opinions.  They are all brutally honest with their opinions.  Some are hits and some not so much! Believe me, it is not easy to take these hard rejections because I have spent many hours on making these recipes.  Italian is easy; they like marinara sauce, white sauce, pesto, all of which can be used in so many different dishes. I am also very fond of Mexican cuisine! Using salsa and enchilada sauce, many dishes can be made: enchiladas, burritos, taco salad, and many more.    I also have my version of Asian peanut sauce which tastes great in Asian bowls, salads, and wraps. This is a favorite of my oldest granddaughter! I use these sauces in my recipes while making different dishes. Alex has been asking me to do the videos just for the different sauces just like I do for Indian chutneys. It will be easy to refer to when you are doing the next recipe and dont have to repeat the sauce again. Keeping that in mind, I just did the recipe for pesto sauce. It is a popular street food. Everyone has their own favorites and there are countless recipes. Pakoras are a very comforting snack especially when it is cold, and it is raining. Here, we are experiencing both and I am wishing for pakoras with a hot cup of chai, blanket and a good TV show or movie. In a particular magazine, I saw a fusion pakora recipe. Instead of using traditional beasn batter, the chef had used red lentil batter. Several times, I have used moong dal batter, but I never even thought about using red lentil. I was ready to give it a try with another pakora recipe using lentil batter. I made some changes and added chopped ginger that added a nice kick to the pakoras. They turned out to be mouthwatering appetizers: crispy on the outside and soft on the inside. These pakoras are addicting! These work as a tasty pairing with your afternoon tea or a spicy delicious snack before any meal. These pakoras have a different crispness but are very delightful. Give these pakoras a try and enjoy! These Pakoras are also vegan and gluten-free. This recipe will serve 4. Course Appetizer Cuisine Indian Prep Time 10 minutes Cook Time 15 minutes Total Time 25 minutes Servings 4 people Ingredients1 cup red lentils washed masoor dal 1 zucchini medium sized, cut into thick rounds 2 Tbsp green chili chopped 2 Tbsp ginger finely chopped 2 Tbsp cilantro chopped 1 1/­­2 tsp salt adjust to taste 1/­­2 tsp red chili powder Pinch of baking soda 2 Tbsp corn starch InstructionsSoak red lentil at least for 1hours or more. Pet dry zucchini slices and keep aside. Blend dal to smooth batter, using just enough water needed to blend. To make Pakora batter add corn starch, salt, chili powder and salt together, mix it well, whipping for few seconds. Add all the other ingredients to the batter, ginger, green chili, cilantro and mix all the ingredient well. Batter should be consistency of pancake mix, if needed add little water. Heat the oil in a frying pan on medium-high heat. The frying pan should have about 1 inch of oil. To check if the oil is ready, put one drop of batter in the oil. The batter should come up but not change color right away. Dip the zucchini slices into the batter one at a time, making sure it is covered by the batter completely. Then, slowly drop into the frying pan. Fry the pakoras in small batches, not overlapping. The pakoras will take about 4-5 minutes to cook. Turn them occasionally. Fry the pakoras until both sides are golden brown. If the oil is too hot, the pakoras will brown too fast and not get crispy. Left over batter, place about one tablespoon of batter into the oil. Fry the pakoras in small batches until golden-brown. The crispy, delicious pakoras are now ready to serve. I like to serve these both pakoras side by side. NotesServing Suggestions - Serve with Peanut chutney, Rhubarb Chutney, Mint Chutney - my favorite is taking 1 tablespoon mint chutney and mix with 1/­­4 cup of yogurt. Rosemary Chocolate Chip Banana Bread Makes one 8×4 loaf If you know me, you know that I sneak rosemary into chocolate wherever I go. And when Im not doing that, Im sneaking chocolate into rosemary. I think one tradition from 2020 that should be carried over into the new year is banana bread. I know everyone has their tried and true, but I rarely make the same recipe twice. Its just such a fun recipe to play with. Anyway, give this a shot. Its mysterious and special but also very familiar and comforting. Works just as well for high tea as it does for morning coffee or midnight snack. And yes, I have high tea now. Ingredients 1 cup mashed very ripe banana (about 3 average sized) 3/­­4 cups sugar 1/­­4 cup olive oil 1 cup unsweetened vegan milk 2 teaspoons pure vanilla extract 2 tablespoons finely chopped rosemary 1 3/­­4 cups all-purpose flour 3/­­4 teaspoon baking soda 3/­­4 teaspoon salt 3/­­4 cup chocolate chips To decorate: Banana sliced lengthwise as best you can (see pic) Sprigs of fresh rosemary Directions Preheat oven to 350 F. Mash the banana in a large mixing bowl until relatively smooth. It should take 3 average sized ones, but spoon the mashed nanas into a measuring cup to make sure, then return to the mixing bowl. Beat in the sugar, olive oil, milk, vanilla and rosemary.  Sift in the half the flour, and all the baking soda and salt and gently mix. Fold in the chocolate chips. Add the remaining flour and mix to incorporate, making sure not to overmix.  Lightly grease an 8×4 loaf pan. Pour the batter into the pan. If youd like to decorate, place the banana cut sides up lenthwise over the batter. Scatter a few springs of rosemary over the top.  Bake for 55 minutes. It should be lightly browned and pulling away from the sides. Its kind of hard to test the inside with a butter knife  because of the chocolate chips and banana might make it look underdone so hope for the best. Let cool and enjoy!

Black & White Cookies Makes 12 cookies Photo by Kate Lewis New Yorkers used to have to New Yorksplain these cookies to people, but I think everyone knows them by now. The classic NYC cakey cookie, half chocolate, half vanilla. Nothing special but somehow the most special cookie in the world! These are modified from Vegan Cookies Take Over Your Cookie Jar and currently featured in The Modern Love Brooklyn Community Cookzine. And actually, somewhere in the editing process the directions got messed up and so there’s some confusing stuff about cocoa powder in the cookzine directions. Sadface. So this is where I will send people when they yell at me and I’m so sorry about the mistake! In any case, with the proper directions (ahem) these aren’t difficult, but probably more of a weekend project, so have a great weekend everyone and I hope you get to make these. Ingredients For the cookies: 1 cup unsweetened vegan milk 2 teaspoons fresh lemon juice 1/­­2 cup melted refined coconut oil 1 1/­­4 cup granulated sugar 1 1/­­2 teaspoons vanilla extract 1 teaspoon grated lemon zest 2 1/­­2 cups all purpose flour 1/­­4 cup cornstarch 1 1/­­4 teaspoon baking powder 1/­­2 teaspoon baking soda 3/­­4 teaspoon salt For the icings: 3 1/­­2 cups confectioners sugar, sifted if clumpy 1/­­4 cup hot water 1/­­4 teaspoon vanilla extract Pinch of salt 1 tablespoon melted refined coconut oil 2/­­3 cup semi-sweet chocolate chips Directions Preheat oven to 350°F. Line baking sheets with parchment paper and lightly spray with cooking oil. In a medium bowl combine milk and lemon juice, let curdle for about a minute. Whisk in oil, sugar, vanilla, extracts and zest. In a large bowl sift together flour, cornstarch, baking powder, baking soda and salt. Form a well in the center pour in wet mixture. Use a whisk to mix until smooth. Scoop batter onto baking sheets using a 1/­­4 cup measuring scoop about 3 inches apart. Bake until tops are puffed and pale golden, and cookies spring back when touched, 18 to 20 minutes. Remove from oven and let sit for about 5 minutes then carefully transfer to cooling rack to cool completely.  Meanwhile, make the icings: Sift the powdered sugar into a large mixing bowl. Add hot water, salt, vanilla and oil and stir with a whisk until smooth. Transfer about 1/­­3 of the of icing to another bowl to use for the chocolate side in a bit. Turn cookies flat sides up, dust off any crumbs and spread white icing over half the cookies using the back of a spoon or a frosting spatula. Let icing dry while making chocolate side. In a double boiler or microwave, melt chocolate chips until smooth. Add melted chocolate to leftover white icing and whisk until smooth. Use tablespoons of hot water if it seems too thick. Spread icing onto other half of the cookie and let set for about 30 minutes. Serve!
