Vegan Stovetop Meat Lasagna (Skillet Lasagna)

October 11 2021 Vegan Richa

Vegan Stovetop Meat Lasagna (Skillet Lasagna)Vegan Meat Lasagna made in one skillet - a vegan spin on classic Italian Lasagna cooked on the stove! No baking required! An easy One Skillet pasta dinner your family will love! Gluten-free option included. Pasta lovers,  this easy Vegan One Skillet Meat Lasagna is going to be a new fave dinner for you. Im obsessed with one skillet dinners like this Stovetop Lasagna! Easy preparation and quick clean up – check and check. This vegan spin on classic lasagna bolognese makes the perfect weeknight meal. It is family-friendly, uses just 1 skillet, and is ready to eat in about 45 minutes! Preparing Lasagna on the stovetop is a lot quicker than making a regular lasagna in the oven and there will be way fewer dishes to clean than with a traditional lasagna as we skip the bechamel part. This also means that there is no layering needed which cuts down on prep time dramatically. Those lasagna sheets just go in with all the other ingredients. All the other ingredients being simple pantry staples like marinara sauce, Italian herbs, onions and garlic. After the popular French onion skillet lasagna  and the spinach Alfredo skillet lasagna, this is your classic red sauce and meat skillet version! If vegan meat crumbles or veggie crumbles arent your thing, you can easily substitute with cooked lentils. I prefer the crumbles as they make the dish feel like totally authentic Italian comfort food, but both options work nicely. Rabri – Vegan Indian Pudding

October 6 2021 Vegan Richa

Rabri – Vegan Indian PuddingFor an easy yet impressive holiday dessert try my vegan spin on Indian rabri,  a thick, creamy milk pudding. My vegan rabri recipe is made with nut milk and flavored with cardamom and saffron.  Gluten-free and soy-free. Craving a sweet treat that is simple yet impressive and will soothe the soul? I have just the thing: this dairy-free Rabri recipe is everything you need in your life right now and perfect for Diwali, holidays and the cozy season. This month is all about Diwali festival sweets and treats! What is Rabri? Rabri is a divine Indian milk pudding. This traditional dessert is made by heating milk until a big part of the liquid has evaporated, and only a thick, creamy pudding remains. The slow cooking adds gritty milk solids to the texture as well as the Malai – drying milk skin which is folded into the pudding. This Milk Pudding is then sweetened and flavored with cardamom and saffron. My vegan spin on the classic Indian rabri recipe has no dairy. We are using homemade nut cream for thickening and almond flour for the texture. The vegan milk pudding couldn’t be easier to make, and it is every bit as delicious as the dairy version-probably even more!. Our homemade nut milk has the perfect thick and smooth consistency and creaminess. Ideal for this rabri recipe, and what I love most is that this dairy-free pudding doesn’t need nearly as much time as milk to reduce because the added blended nuts already act as a thickener. Rabri Pudding is usually flavored with cardamom and saffron and I stick to these traditional flavors. If you want to add one more thing, go with almond or pure vanilla extract. You could also add a splash of culinary rose water but be very careful. Rosewater can take over the flavor profile very quickly. I like to garnish this pudding with chopped pistachios, but any nut or a combination of nuts and culinary rose petals will look pretty. Serve the Rabri chilled as is in small portions or over other desserts such as a hot jalebi or warm gulab jamuns! Michelin-Star Chef Turns Acclaimed London Restaurant Vegan

June 27 2021 Happy Cow veggie blog

Gauthier Soho Michelin-star and multi-award winning chef, Alexis Gauthier, has turned his acclaimed London restaurant, Gauthier Soho, completely vegan. The French fine-dining restaurant re-opened on June 23, as Covid-restrictions lifted in the city. After 10 years in service, the restaurant’s menu is now entirely plant-based. “I believe it is our duty as human beings to leave the planet in a better state than we found it, and a very good place to start is addressing the impact we make with our needless and selfish consumption of animals. I am a classically trained French chef who held Michelin stars for 12 years and the thought of someone like me being vegan would have been insane five or ten years ago. But now the world is waking up. This is the future.” Chef Alexis Gauthier A Past & Future with Plants When Chef Gauthier opened his restaurant in 2011, he had a strong interest in serving plant-focused dishes. At that time, 20-30% of the restaurants bookings were already vegetarian tasting menus, according to the restaurant’s website. Five years later, when Gauthier went vegan himself, the idea of removing animal products from the kitchen became more personally compelling. However it took a few […] The post Michelin-Star Chef Turns Acclaimed London Restaurant Vegan appeared first on HappyCow.

Punjabi Aloo Paratha

March 26 2021 Manjula's kitchen

Punjabi Aloo Paratha (adsbygoogle = window.adsbygoogle || []).push({}); Print Punjabi Aloo Paratha .wprm-recipe-rating .wprm-rating-star.wprm-rating-star-full svg * { fill: #343434; } Aloo Parathas make for the perfect lazy weekend brunch. Parathas can be made plain or with a variety of different fillings. A flavorful potato filling is by far the most popular. Aloo Parathas are very popular in North India, at any time of the day. In Punjab, Aloo Parathas are a staple for breakfast. Traditionally, Aloo Parathas are served with homemade butter and buttermilk known as chaas. I'm sure you are thinking that making these parathas is very time consuming. With our busy schedules and hectic mornings, how is possible to prepare these! Of course, parathas taste best when fresh off a hot skillet! An easy solution to this problem is to simply prepare part of the recipe in advance until you are ready to roll the parathas. You can prepare the dough and filling in advance and have the potato-mix filled balls ready to just start rolling. The prepared dough can be refrigerated for up to two days. Enjoy! This Recipe will make 4 parathas. Course Bread Cuisine Indian Prep Time 15 minutes Cook Time 15 minutes Total Time 30 minutes Servings 4 parathas EquipmentCalphalon Contemporary Hard-Anodized Aluminum Nonstick Cookware, Square Griddle Pan, 11-inch, Black KitchenAid Classic Nylon Slotted Turner, One Size Anchor Hocking Glass Mixing Bowls OKSLO Manual wooden roti chapati flatbread tortilla presser maker with rolling pin, 10 IngredientsFor the Dough1 cup whole wheat flour 1 1/2 tbsp oil 1/4 tsp salt 1/2 cup cold water Use more as needed For the Potato Filling1 1/2 cup potatoes mashed 1/2 tsp salt 1/4 tsp red chili powder 1/2 tsp cumin seeds Jeera 2 tsp coriander powder dhania 1/8 tsp asafetida hing 1/2 tsp mango powder amchoor 1/4 tsp garam masala 1 Tbsp green chili chopped 2 Tbsp cilantro chopped, dhania Also need. 1/4 cup whole wheat flour for rolling 2 Tbsp oil to cook InstructionsMaking the DoughMix flour, salt, and oil, until oil is incorporated with flour well, add water slowly to make a soft dough (add water as needed). Knead dough well on a lightly greased surface to make the dough soft, smooth, and pliable. Set the dough aside and cover. Let the dough rest at least ten minutes. FillingIn a bowl take mash potatoes add green chilies, cilantro, cumin seeds, garam masala, mango powder, and salt, mix it well. Making parathaDivide the dough into 4 equal parts and roll them into balls. Then divide the potato filling into 4 parts and shape into balls. Potato balls should be about 1 1/2 times larger than the dough balls. Roll dough ball into a 3 circle. Place a filling ball in the center. Pull the edges of the dough to wrap it around the potato filling. Repeat to make all six balls. Let the filled balls settle three to four minutes. Meanwhile heat heavy skillet on medium high heat until moderately hot. To test, sprinkle water on the skillet. If the water sizzles right away, the skillet is ready. Press the filled ball lightly on dry whole wheat flour from both sides. Using a rolling pin, roll the balls lightly to make six-inch circles, keeping the sealed side of the balls on top. If the dough sticks to the rolling pin or rolling surface, lightly dust the parathas with dry flour. Oil the skillet and place the paratha on the skillet. When the paratha starts to change color and begins to puff up, flip it over. You will notice some olden-brown spots. After a few seconds, drizzle one teaspoon of oil over the paratha, and spread with spatula. Flip the paratha again and lightly press the puffed areas with a spatula. Flip again and press with a spatula making sure the paratha is golden-brown on both sides. Repeat for the remaining parathas. Parathas are best served hot and crispy. They will be soft if not served hot. If you are not going to serve them right away, cool them on a wire rack to keep them from getting soggy. Parathas can be kept unrefrigerated for up to two days wrapped in aluminum foil or in a covered container. For later use, parathas can be refrigerated three to four days or frozen for up to a month. Re-heat using a skillet or oven. NotesVariations Substitute chopped cilantro with 1/4 cup finely chopped mint leaves, or experiment with your favorite herb. Be sure to pat the herbs dry before adding to the mixture. Serving Suggestions - Parathas can be served with Tomato Chutney, Plain Yogurt, mattar Paneer, Green Chili pickle. - Serve it like a Mexican quesadilla by topping it with cheese and sliced tomatoes, then folding it in half. Chocolate Raspberry Overnight Oats

March 17 2021 Golubka Kitchen

Chocolate Raspberry Overnight Oats I make a variation of these overnight oats all the time. I love that they come together super quickly, make for a great breakfast/snack/dessert, and are pretty filling, thanks to the addition of chia and hemp. For this decadent raspberry and chocolate version, we make a quick chocolate hemp milk by blending hemp hearts with cacao, maple syrup, and water, which is then used as the soaking liquid for the oats and chia. We also stew some raspberries and layer them between the oats, for that classic chocolate and raspberry flavor pairing. The result is something between breakfast and dessert, and it travels super well, too. Hope you’ll give these oats a try! Chocolate Raspberry Overnight Oats   Print Serves: 4-6 Ingredients 10 oz frozen or fresh raspberries 4 tablespoons maple syrup, divided juice from half a lemon ¼ cup hemp hearts ¼ cup cacao powder 2 cups rolled oats ¼ cup chia seeds Instructions Put the berries in a small saucepan. Bring to a simmer over medium heat and let simmer and thaw out, if frozen, for 5-10 minutes, until broken down in parts and jammy. Turn off the heat, add 2 tablespoons of maple syrup and the lemon juice, mix well. Let cool. In an upright blender, combine the hemp hearts, cacao powder, 2 tablespoons of maple syrup, and 4 cups of water. Blend on high until smooth. In a large bowl, combine the rolled oats and chia seeds, mix well. Add the chocolate hemp milk, and mix it in. Keep mixing every few minutes, until the oats and chia absorb the liquid and thicken. Refrigerate for a few hours or overnight before enjoying. You can either store the oats and raspberries in separate airtight containers in the refrigerator, and combine when serving, or layer the oats and raspberries in jars, as pictured. Enjoy right out of the fridge. 3.5.3226 The post Chocolate Raspberry Overnight Oats appeared first on Golubka Kitchen.

Madras Curry Tofu Casserole

July 14 2021 Vegan Richa

Madras Curry Tofu CasseroleDinner just got easier with this Madras Curry Tofu Casserole! A simple one-pot meal with baked tofu in a flavorful Indian gravy! Serve with rice and store leftovers for meal prep!  Madras Curry Tofu Casserole – a celebration of two of my favorite things, Tofu and Madras curry, combined into a warming, comforting one-pot dinner that basically cooks itself! Easy prep work and next to no dishes to clean. What’s not to love? Homemade madras curry powder and a simple madras sauce that you can use with tofu, veggies or chickpeas/beans! What is Madras Curry Powder? You might already know that there is no such thing as “curry powder” in Indian cuisine as each curry dish has its own combination of spices that makes it unique. There’s more – every family also has their own recipes for spice mixes, so even classic Indian curries can taste vastly different from household to household. Curry powder is a western blend which came about to approximate a general North Indianish curry. Madras curry powder came about to approximate the spicier southern Indian cuisines (chettinad, Andhra etc ). For spicier curries, Madras curry powder is a great place to start your Indian cooking journey! You can control the heat, it is earthy, and oh so fragrant. I love making my own spice mixes, and I recommend you give my Madras Curry mix a try! There is nothing like the smell of freshly ground cumin, coriander, and cardamom wafting through your kitchen. And I guarantee it will take this Tofu Casserole to a whole new level. Vegan Pasta e Fagioli

April 22 2021 Vegan Richa

Vegan Pasta e FagioliVegan Pasta e Fagioli is a hearty, nourishing, and nutritious white bean and pasta soup packed with healthy veggies and plant-based protein! An Italian comfort food classic that is perfect all year round but especially on chilly nights. Serve with garlic bread.  When it comes to Italian soups, most people know minestrone and then maybe Italian wedding soup.  Let me tell you, you are missing out on a goodie! Pasta e Fagioli -which translates to pasta and beans and that sums it up pretty well. Reminds you of minestrone? Well, it’s similar, but there are differences – mostly in texture and some ingredients. What is the difference between Pasta e Fagioli and minestrone? Both Pasta e Fagioli and minestrone are hearty Italian soups made from a tomato base with added beans and pasta. While a classic Italian minestrone soup often has a whole array of colorful veggies added (like green beans or zucchini), Pasta e Fagioli is typically just white beans and pasta. So while minestrone is a bit lighter, Pasta e Fagioli is meant to be very thick! While there are not too many veggies added in the original version, in my recipe, I add some celery and carrots as well to make the broth more flavorful and the soup more colorful! In the traditional version, this Italian white bean soup is often made with pancetta or bacon. To make this a vegan Pasta e Fagioli recipe, we skip those additions and up the umami by adding tomato paste. You can add vegan bacon if you wish. Plenty of Italian herbs take care of the rest! This soup tastes amazing! Whether made on a sheet pan or a casserole dish, baked Ratatouille is so simple yet flavorful with those dried herbs – trust me, you wont tire of it. This simple casserole version takes only 15 minutes of prep work before the pan goes into the oven to roast. The only hands-on part of this recipe is chopping the eggplant, summer squash, zucchini, bell pepper, tomatoes, and onion. Then it gets all tossed with olive oil,  herbs, salt, and pepper and then roasted in the oven for about 45 minutes during which your house will start to smell incredible. Once done, you can either dig in right away or store your ratatouille in the fridge for the workweek. Or freeze it!
