Members Only Vegan Meatloaf Serves 6 to 8-ish Autumn for Gen X means Member’s Only jackets and meatloaf This is for our elite members ONLY. Member that can handle lentils, TVP (textured vegetable protein) and seitan. And if it makes you think of Members Only jackets, that means you are over 40. So lets talk the 80s. It was a time where the only thing we were allowed to eat was meatloaf. And it was specifically this kind of meatloaf: hearty and meaty, not dry but not tooooo juicy, a smoky, sweet glaze (ok sometimes it was just ketchup), and delicately seasoned, straight off the 80s spice rack – paprika, thyme, onion and garlic. We literally had no other spices. And although this very meal was the punchline in lots of Sunday comics, who doesnt crave the hell out of this meatloaf? Its amazing in a sandwich the next day. Its the perfect accompaniment for peas and mashed potatoes. And its still as comforting as ever, which is just what we need right here and now in 2020. Recipes Notes ~ The lentils should be overcooked and bordering on mushy! Canned lentils that are drained will work just perfectly. ~ This recipe is easy, but does require some attention so that it cooks correctly. There’s about an hour and 20 minutes of baking time total. So just read the directions carefully when it comes to flipping. Basically, you’re gonna bake for a bit, flip it once, then flip it again. Then, you’re gonna unwrap it and bake for a bit. THEN you’re gonna transfer it to parchment, glaze it and bake it again. It’s easy but your eyes might GLAZE over while reading the directions. ~ I really suggest storebought breadcrumbs here because moisture content is going to be key. You can try homemade but don’t say I didn’t warn you. ~ I used Bob’s textured vegetable protein and wheat gluten. If you have a wheat and/­­or soy allergy, this isn’t the recipe for you! I love making wheat and soy-free recipes but this just isn’t one of them. If, however, you are part of a cult that believes that soy is part of the deep state, please find yourself another chef to harass. Ingredients 3/­­4 cup textured vegetable protein 2 bay leaves 1 cup overcooked brown or green lentils (see note) 1/­­2 cup vegetable broth 2 tablespoons tomato paste 3 tablespoons tamari or soy sauce 2 tablespoons olive oil 1 tablespoon smoked paprika (not spicy) 1 1/­­2 teaspoons dried thyme 1 teaspoon onion powder 1 teaspoon garlic powder 1/­­2 teaspoon black pepper 1/­­4 teaspoon salt 1 cup vital wheat gluten 3/­­4 cup grated or very finely chopped yellow onion 1/­­2 cup storebought breadcrumbs For the glaze: 1/­­3 cup tomato paste 3 tablespoons water 1/­­4 cup brown sugar 1 tablespoon smooth dijon mustard 1/­­8 teaspoon nutmeg Pinch salt Directions In a small pot, bring 3 cups of water to boil with 2 bay leaves. Turn off the heat, mix in the TVP and let it sit for about 10 minutes until soft and spongy. Pour into a fine mesh strainer and let cool. Remove bay leaves. Preheat oven to 350 F.  In a mixing bowl mash the lentils into a puree then add the vegetable broth. You can also, if you prefer, simply puree lentils with vegetable broth in a blender then add to the bowl. Mix in the tomato paste, tamari, and olive oil and beat until the tomato paste is incorporated. Add the smoked paprika, rub the dried thyme between your fingers and add along with the onion powder, garlic powder, pepper and salt.  When the TVP is cool enough, press it against the strainer to release as much moisture as possible. Add it to the mixing bowl and mix well, mushing it up to make sure it soaks up the liquid.  Lightly mix in the chopped onion and breadcrumbs. Add vital wheat gluten and use your hands to knead for about 2 minutes, then form into a ball. You might want to wear kitchen gloves for that to keep your hands fresh and clean.  Spray an 18-inch sheet of tin foil with cooking oil. Place the ball of meatloaf in the center of the tinfoil, and form it into an 8×3 inch loaf that is rectangular and as flat as you can make it on all sides. Wrap the tin foil around the loaf and transfer to a baking sheet.  Ok, now comes an important part about flipping so pay attention. Bake for 30 minutes then flip upside down and bake for another 20 minutes. Then flip again to the original position. This time, unwrap the tin foil. Bake for 10 more minutes just to get it a little crusty.  While all this baking is happening, make the glaze. Simply vigorously mix all ingredients for the glaze together in a mug, using a fork to do the mixing. Set aside.  After the loaf bakes with the tin foil open, you are going to transfer it to parchment. So place the baking sheet somewhere safe where it wont burn you or anything (on the stovetop works for me) and layout a kitchen towel as close as possible. Use oven mitts or towels to lift the loaf in the tin foil onto the towel. Now line the baking sheet with parchment and spray it with cooking oil. Use a wide spatula to get the loaf back onto the parchment lined sheet. Pour the glaze all over and use the back of a spoon to make sure you get it good and coated.  Place back in the oven and bake for 20 minutes. Remove and let cool slightly before slicing serving!

The dish gets rounded up with some blistered cauliflower that enhances the toastyness and balances the garlic and parsley. Recipe | Deconstructed Breaded Zucchini

Clearly I am watching too much Top Chef. Because everything on Top Chef is deconstructed, right? You can’t argue with the fact that breaded zucchini is awesome. So why deconstruct it? Well, because breaded zucchini is a huge hassle to make what with the egg on the hands and the breadcrumbs under the fingernails. And painstakingly dipping each little zucchini round into egg and then breadcrumbs takes a lot of time too. Deconstructed breaded zucchini is breaded zucchini for those of us who are short on time, lazy, or a little bit of both. While the onion might not be included in the original version, I threw it in because I had it on hand and I like sauteed zucchini with onions. So why not? This might not be quite the same as breaded zucchini, but it does take half the time (and effort!), which is a big plus in my book.

These hearty burgers are made up of black beans, brown rice, sunflower seeds and amazing seasoning. You can grill or pan fry the patties. Veggie burgers can be overly squishy (too many beans, too much moisture), or too crumbly (not enough binding, big unmashed ingredients such as whole beans or large chunks of onions, peppers, veggies). Both these issues can be solved with vital wheat gluten in the patties. I don’t like the texture of the patty with vital wheat gluten, so in these burgers just the right balance of cooked grains, beans and some breadcrumbs work well to make a sturdy grillable patty. With any veggie burger, mash the ingredients well and pack them well for sturdier results.  Black beans work really well in these burgers. You can also use kidney beans. The toasted sunflower seeds make these hearty. Whole coriander seeds, smoked paprika and lemon add complex flavors. Cauliflower Mash

Cauliflower is roasted until brown, then blended with Greek yogurt and vegetable broth for a flavorful, creamy cauliflower puree. This cauliflower mash can be served on the side in place of mashed potatoes and offers a healthy dose of the vitamin K! This recipe is from Ashley of Sprout. Serves 4 - 1 head cauliflower, cut into 1 inch florets - 1 tablespoon olive oil - 1/­­2 teaspoon salt - 1/­­4 teaspoon black pepper - 1/­­4 cup plain Greek yogurt - 1 cup low sodium vegetable broth, divided - whole wheat breadcrumbs, for garnish - fresh parsley, for garnish Preheat an oven to 450 degrees. Toss the cauliflower with the olive oil. Season with the salt and pepper. Spread the florets onto a baking sheet in 1 layer. Roast for 30-35 minutes, or until the edges of the cauliflower are deep brown. Transfer the roasted cauliflower florets to a blender. Add the yogurt and 1/­­2 cup of the vegetable broth to the blender. Blend until smooth. If cauliflower mash seems too thick, add a little more vegetable broth, 1 tablespoon at a time until the mash has reached desired consistency. Taste for seasoning and adjust if desired. As of September 5th, the Beyond Meatball™ Marinara sub has been available for a limited time only in more than 600 select locations in the U.S. Participating restaurant locations include Jackson, Mississippi; South Bend-Elkhart, Indiana; Fresno-Visalia, California; Louisville, Kentucky; and Harrisburg, Pennsylvania. The Beyond Meatball™ Marinara sub will make its way to select Canada locations on September 20th. The Beyond Meat team collaborated to make the meatballs exclusively for Subway. The six-inch toasted subs are made with Beyond Meats protein-packed meatballs and topped with provolone cheese, marinara sauce and grated Parmesan cheese. According to Subway’s website, the original meatball marinara sub has 20 grams of protein (using beef). With Beyond, it’ll weigh in at 24 grams of protein per sub. How to order it? Well, you can always request it on standard Italian or 9-grain wheat and forego the provolone and Parmesan to make it vegan. As for gluten-free or soy-free options, unfortunately it won’t be possible, as the meatballs were made with a special proprietary blend of breadcrumbs by Subway, which includes soybean oil. Nutfree Gluten-free options Jump to Recipe I’ve been wanting to convert this marinated portobellos with garlic sauce into a hand held burger thing for a while. with some crispy breading action. so here goes! The mushrooms are marinated in a delicious balsamic soy marinade, then baked until al dente. They are then stuffed with an easy cashew mozzarella cream and coated liberally with breadcrumbs. Then baked to golden perfection. Now if you can wait at this point, then assemble the burger, else these portobellos are ready to devour with some extra mozzarella cream and fresh basil or herbs! so good. This looks like a long recipe with the many components, but you can make the mozzarella cream ahead and then its just baking and serving. You can also use other cheese sauce of choice here. and Serve the mushrooms however you like, bunless, or over a bowl or with mashed potatoes or over spaghetti with marinara! Eggplant Pesto “Meatballs”

Who said meatballs must be made with meat? Hearty eggplant is one of the best vegetable substitutes for making meat-less meatballs because of its meaty texture and high fiber content. These plant-based Eggplant Pesto Meatballs have a similar texture to your traditional Italian recipe, but the eggplant in our recipe gives these balls a more tender and silky consistency and a flavor that makes it easy to forget that you are not eating beef. Makes 40 meatballs (5 servings) - Eggplant mixture 1 1/­­2  tbsp  olive oil 1  medium  onion  chopped 2  garlic cloves  minced 1 1/­­4  pounds  eggplant  unpeeled and cut into 1″ cubes 3/­­4  cup  water 1/­­4  tsp  salt 1/­­2  tsp  pepper 1  cup  panko bread crumbs red pepper flakes  optional - Cashew Pesto 2  garlic cloves,  minced 1 cup  raw cashews,  soaked overnight or boiled for 20 minutes until soft 2  tbsp  pine nuts 2  tbsp  water 2  tbsp  lemon juice 1/­­4  cup  nutritional yeast 1/­­4  tsp  sea salt   Preheat oven to 400 degrees F. Place 1/­­2 tablespoon olive oil in a large nonstick skillet over medium high heat. Add onion and saute until translucent about 3 minutes. Add garlic until lightly browned, remaining olive oil, and eggplant, and brown on both sides. Add water, season with salt and pepper and cook, stirring occasionally until eggplant is soft. Remove from heat, transfer to a heat proof bowl, and set aside. In a food processor, add garlic, cashews, pine nuts, nutritional yeast, sea salt, and water. Process until smooth. Add basil, lemon juice, and olive oil while processing. Mix until smooth and set aside. In the bowl, mash eggplant into small pieces with the back of a wooden spoon or potato masher. Add the cashew pesto and mix well. Lastly, add the breadcrumbs and red pepper flakes and stir until well combined. Roll eggplant meatless balls in about 2-inch diameter approximately 1 1/­­2 tablespoon of mixture. Transfer to parchment lined baking sheet and bake until browned (about 25 minutes) turning once so the eggplant pesto “meatballs are browned on both sides. Cauliflower is tossed in homemade Cajun spice blend and baked, then served over easy creamy Garlic sauce Penne Pasta. Vegan Garlic Pasta Recipe. Can be Nut-free gluten-free. This Easy Pasta comes together quickly and makes an amazing meal. Toss the Cauliflower in Cajun spice blend and put it in the oven to bake. Boil the pasta, simmer the sauce to thicken and fold in the pasta. Put it all together, garnish with parsley or basil. Perfect! This dish came about when I remembered some friends had recommended a dish with Cajun chikin over Creamy pasta (way back when). It was a popular dish at a neighboring restaurant. For a vegan version of that dish, I made this creamy garlicky pasta sauce with roasted and minced garlic, which makes a great pasta by itself or can be used as a garlic mac and cheese sauce. The Cajun spice blend is magic. Rub it all over the cauliflower, bake and try not to eat the entire helping. The baked Cajun Cauliflower is amazing! Make just that and serve it with a cooling dip as a starter or appetizer. The garlic sauce is easy and cheesy. Add elbows to it and make into a mac bake, covered with breadcrumbs mixed with smoked paprika or some of the cajun blend. Vegan Gluten-free Soy-free Recipe.  Snacking just got better with these Spicy Breaded Jackfruit Bites! Jackfruit is dipped in a flavorful batter, rolled in spices and hemp seeds and baked to crisp. Serve this with a favorite cooling dipping sauce.  I often make these with breadcrumbs for a crispier result. Use panko breadcrumbs or coarsely ground nuts for variation. The recipe is easily doubled (which is a great idea to double, because you will want all of it!). Unripe Jackfruit is used as a vegetable in many asian dishes. It has become popular as a meat substitute in other cuisines. In this recipe, I use the spices and batter that would make a fried chikin nugget kind of result with the jackfruit slices.
